  • 1 1/2 cups flour, all-purpose sifted
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 18 teaspoon allspice
  • 1 1/2 cups wheat cereal flakes, crushed
  • 1 cup walnuts coarsely chopped
  • 1/4 cup apples chopped
  • 1 each eggs slightly beaten
  • 1/4 cup brown sugar firmly packed
  • 2 teaspoons vegetable oil
  • 1 1/2 cups buttermilk lowfat

Directions

    Grease or spray 9x5x3 inch loaf pan.

    Preheat oven to 350F (180C).

    Mix and sift flour, baking powder, baking soda, salt and spices into bowl.

    Stir in cereal, walnuts and apple.

    Combine egg, brown sugar, buttermilk and oil; add to dry mixture.

    Stir just enough to moisten dry ingredients.

    Do not beat.

    Spoon into pan.

    Bake at 350F (180C) F one hour or until toothpick inserted into center comes out clean.
