Walnut Broccoli

  • 3 (10 oz.) pkg. frozen chopped broccoli
  • 6 Tbsp. diet margarine
  • 4 Tbsp. flour
  • 1 c. chicken broth
  • 2 c. skim milk
  • 2/3 c. water
  • 2 c. herbed poultry stuffing (Pepperidge Farm is best)
  • 2/3 c. chopped walnuts

Directions

    Cook broccoli according to package directions until just barely tender.

    Drain well and place in oiled (vegetable) 2-quart casserole.

    Melt 2 tablespoons of the margarine in a saucepan. Stir in the flour, cook briefly, and then add the milk.

    Add the chicken broth and cook, stirring constantly, until thickened.

    Set aside.

    Melt the remaining 4 tablespoons of margarine in the 2/3 cup of water.

    Mix with the herb dressing and walnuts.

    Pour the chicken broth sauce over the broccoli, sprinkle evenly with walnut mixture and bake at 400° for 20 minutes or until crusty on top.
