- 1 whole chicken breast, deboned
- 2 tablespoons soy sauce
- 2 tablespoons oil
- 1 tablespoon cornstarch
- 14 teaspoon ginger
- 14 cup walnuts, coarsely chopped
Directions

1Combine soy sauce, cornstarch and then peanut oil in flat bottom bowl.

2Add ginger.

3Slice partially frozen chicken breast into slices between 1/8 to 1/4 inch thick.

4Drop into soy marinade and let sit 1 hour.

5Saute walnuts in 1 tablespoon oil until golden, watch constantly.

6Takes less than 5 minutes.

7Remove from pan to drain on paper towel.

8Lightly salt nuts.

9Heat 1 tablespoon oil.

10Stir-fry chicken, about 4 to 7 minutes.

11Add walnuts and blanched pea pods.

12Cook 1 minute longer.

13Serve over a bed of rice.
