Walnut Chicken

Ingredients

  • 1 1/2 lb. chicken breasts, boned, skinned and cut in 1-inch pieces
  • 3 Tbsp. soy sauce
  • 2 tsp. cornstarch
  • 2 Tbsp. dry sherry
  • 1 tsp. grated ginger root
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. crushed red pepper
  • 2 Tbsp. cooking oil
  • 2 medium green peppers, cubed
  • 4 green onions, bias-sliced
  • 1 c. walnut halves

    Blend soy sauce into cornstarch.

    Stir in sherry, ginger root, sugar, salt and red pepper.

    Preheat wok or skillet over high heat.

    Stir-fry peppers and onions in oil about 2 minutes. Remove.

    Add walnuts to wok and stir-fry about 2 minutes.

    Remove. Add half of chicken to wok; stir-fry about 2 minutes.

    Remove and stir-fry other half.
