Walnut Pancakes

- 1 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbsp. wheat germ
- 2 Tbsp. brown sugar
- 2 Tbsp. vegetable oil
- 1 c. milk
- 1 egg, beaten
- 1 tsp. vanilla
- 1/4 c. chopped walnuts
Directions

1Sift flour, baking powder and salt into large bowl.

2Stir in wheat germ, brown sugar, vanilla, oil, milk and egg.

3Mix just until blended.

4Let mixture stand for about 5 minutes while griddle heats.

5Pour batter onto hot griddle.

6Immediately sprinkle about 2 teaspoons of chopped walnuts onto each pancake. When bubbles form on surface, flip pancake.

7Let cook about one more minute.

8Serve with butter and hot maple syrup.
