Walnut Soup Recipe

Ingredients

  • 1/2 c. butter
  • 1 c flour
  • 1 quart. veal stock (or possibly beef)
  • 1 quart. lowfat milk
  • 2 ounce. dry white wine
  • 1/2 c. lowfat sour cream
  • 3 ounce. minced walnuts
  • 1 teaspoon dry mustard
  • 1 sm. garlic clove, crushed
  • Salt and white pepper
  • Minced fresh parsley to garnish

Directions

    Heat butter in pot, add in flour, mix well.

    Cook for a minute.

    Add in heated stock, lowfat milk, and wine while stirring.

    Let come to a boil.

    Add in lowfat sour cream, walnuts, mustard and garlic.

    Add in salt and pepper to taste.

    Serve warm, garnish with parsley.
