Walnut Soup Recipe

Ingredients
- 1/2 c. butter
- 1 c flour
- 1 quart. veal stock (or possibly beef)
- 1 quart. lowfat milk
- 2 ounce. dry white wine
- 1/2 c. lowfat sour cream
- 3 ounce. minced walnuts
- 1 teaspoon dry mustard
- 1 sm. garlic clove, crushed
- Salt and white pepper
- Minced fresh parsley to garnish
Directions

1Heat butter in pot, add in flour, mix well.

2Cook for a minute.

3Add in heated stock, lowfat milk, and wine while stirring.

4Let come to a boil.

5Add in lowfat sour cream, walnuts, mustard and garlic.

6Add in salt and pepper to taste.

7Serve warm, garnish with parsley.

8Makes 2 qts.
