  • 2 c. cubed red potatoes
  • 2 Tbsp. finely chopped purple onion
  • 1 Tbsp. plus 1 tsp. white wine vinegar
  • 1 Tbsp. freeze-dried chives
  • 1 tsp. olive oil
  • 1/4 tsp. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

    Place potatoes in a saucepan. Add water to cover.

    Bring to a boil.

    Cover, reduce heat and simmer 10 minutes or until the potatoes are tender.

    Drain.

    Place potatoes and onion in a bowl. Combine vinegar and remaining ingredients.

    Stir well. Add to the potato mixture; toss gently to coat.
