Warm Shell Pasta Salad

  • 8 oz medium pasta shells
  • 1/2 cup chicken broth
  • 2 tbsp extra virgin olive oil
  • 1/2 cup chopped sun-dried tomatoes in oil
  • 4 tbsp chopped herbs, such as parsley, thyme, chives
  • 2 tsp chopped garlic
  • 2 cups baby arugula or rocket
  • 1/2 cup chopped basil leaves
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pitted small herbs with Kalamata olives (may need to halve olives if too big)

Directions

    Cook pasta according to the package directions. Drain and transfer to a large mixing bowl. Add broth, oil, tomatoes, herbs, garlic, arugula, and basil leaves. Toss to combine, season to taste with salt and pepper. Stir in cheese and olives. Serve.
