  • 4 Tbsp. salt in 1 qt. water
  • 1 qt. vinegar (to 7 lb. melon)
  • 4 lb. sugar
  • cinnamon bark
  • cloves
  • mace
  • ginger root

    Soak overnight in salt water. Soak overnight in clear water.

    Then boil in strong ginger water after weighing.
