- 1 medim watermelon
- 1/2 c. salt
- 1 Tbsp. whole cloves
- 1 stick cinnamon
- 1 lemon, thinly sliced
- 4 c. sugar
- 2 c. white vinegar
- 2 c. water
Directions

1Trim skin and pink flesh; cut into 1-inch pieces.

2Dissolve salt in 1 quart water.

3Add rind; add more water to cover rind if needed.

4Let stand 6 hours.

5Drain, rinse and cover with water. Cook, covered, for about 20 minutes or until tender.

6Drain.

7Tie spices in cheesecloth bag.

8Combine spices and remaining ingredients in saucepan.

9Simmer 10 minutes.

10Add rind; simmer about 1 hour or until rind is translucent.

11Remove spice bag.
-
12Pack hot into sterilized jars.

13Screw cover tight.
-
14Substitute cucumbers for watermelon.
