- 1 lb. bacon, cut in 1-inch pieces
- 1 c. finely chopped onion
- 3 Tbsp. margarine or butter
- 1/4 c. flour
- 1/2 tsp. pepper
- 2 1/2 c. milk
- 1/2 c. Parmesan cheese
- 3 c. cooked rice
- 2 small zucchini, sliced
- paprika
Directions

1Fry bacon on medium heat until crisp; drain.

2Remove bacon and drippings.

3In same pan, cook onion in butter on medium heat for 5 minutes.

4Stir in flour and pepper.

5Gradually add milk and cook, stirring, until thick.

6Stir in cheese, bacon, rice and zucchini. Pour into lightly greased 12 x 8-inch baking dish.

7Sprinkle paprika on top.

8Cover and bake at 375° for 20 minutes.

9Remove cover and bake 10 more minutes.
