- 8 eggs
- 1 c. diced, cooked ham
- 1 small onion, diced
- 1 Tbsp. butter
- 12 slices bread
Directions

1Scramble the eggs, adding milk, if desired.

2Add the chopped ham and diced onion; stir well.

3Melt the butter in a 12-inch frying pan over medium heat.

4Pour the egg mixture in the pan and let it cook until the eggs begin to set, about 3 to 5 minutes. Turn the eggs as neatly as you can; allow them to set and cook another 3 minutes.

5Divide into 6 servings.

6Serve on plain bread.
