  • 3/4 cup corn meal
  • 1/3 cup bean flour
  • 1 cup sweet rice and/or tapioca flour
  • 1/2 tsp salt
  • 1/2 tsp xanthan gum
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 eggs
  • 1/4 cup oil
  • 1/4 cup honey or molasses
  • 1/2 tsp vinegar
  • 2 tbsp grated lemon peel
  • 2/3 cup orange juice

    Whisk together dry ingredients. In a separate bowl, mix wet ingredients. Fold in dry mixture. Pour into muffin tins. Bake at 325° for 20 min.
