- 4 egg whites
- 3 1/2 c. flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2/3 c. shortening (Crisco)
- 2 c. white sugar
- 2 Tbsp. boiling water
- 1 1/2 c. cold water
- 1/4 tsp. almond flavoring
- 1 tsp. vanilla or lemon flavoring
Directions

1Beat egg whites until stiff (set aside).

2Sift together flour, baking powder and salt.

3Mix shortening with white sugar and add boiling water.

4Alternate this with flour mixture and cold water. Add flavorings.

5Fold in egg whites.

6Bake at 350° for 30 minutes. Makes 2 (8-inch or two 9-inch) cake layers.
