Ingredients

  • 2 1/2 to 3 lb. chicken breast
  • 6 c. chicken broth
  • 2 Tbsp. olive oil
  • 2 medium onions, chopped
  • 8 cloves garlic, chopped
  • 1 1/2 jalapeno peppers, chopped
  • 1/2 tsp. ground cinnamon
  • 1 Tbsp. ground cumin
  • 1 Tbsp. dried oregano
  • Tabasco sauce to taste
  • 1 lb. white beans, soaked overnight
  • 3 to 4 c. Monterey Jack cheese, shredded

Directions

    Combine chicken and broth in 6-quart pot.

    Cook 15 to 20 minutes.

    Remove chicken from broth and skim off fat.
  4. 4
    Bone and cube chicken.

    Saute onions and garlic in olive oil until tender. Add chopped chilies, cumin, Tabasco sauce, oregano and cinnamon. Do this in original pot.

    Add broth (6 cups should be left) and soaked beans.

    Cook until beans are done.

    Add chicken cubes and season to taste.

    Just before serving, add 1 cup of shredded cheese.
