  • 1 lb. large dried white beans (Great Northern)
  • 9 c. chicken broth, divided
  • 2 cloves garlic, minced
  • 2 medium onions, chopped and divided
  • 1 Tbsp. oil
  • 2 (4 oz.) cans chopped green chilies
  • 1 to 1 1/2 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 tsp. Knorr Caldo de Pollo
  • 4 c. diced chicken, cooked
  • 3 c. Monterey Jack cheese

Directions

    Combine beans, 6 cups chicken broth, garlic and half of onions in a large pot; bring to a boil.

    Reduce heat and simmer, covered, until beans are tender, 2 to 3 hours.

    Add additional broth if needed.
