Ingredients

  • 1 lb. dried white beans
  • 2 small-medium onions, chopped
  • 1 red pepper
  • 2 cloves garlic
  • 2 Tbsp. oil (preferably corn or peanut oil)
  • 2 tsp. each: ground cumin, dried oregano, ground coriander
  • pinch of each: ground cloves, cayenne pepper, white pepper (add more cayenne and white pepper to make hotter)
  • 4 boneless, skinless chicken breasts, diced (substitute some thigh meat for a bit more flavor)
  • 1/2 c. grated Monterey Jack cheese
  • 4 green onions, thinly sliced

Directions

    Combine beans, stock, 1/2 the onion, garlic and salt in a large kettle and bring to a boil.

    Reduce heat, cover and simmer 2 hours or until beans are tender.

    Remove from heat and store in refrigerator overnight.
