Ingredients

  • 1 tsp. vegetable oil
  • 2 medium onions, chopped
  • 2 coves garlic, finely chopped
  • 3 c. chicken broth
  • 2 Tbsp. cilantro
  • 2 Tbsp. lime juice
  • 1 tsp. ground cumin
  • 1/2 tsp. dried oregano
  • 1/4 tsp. red pepper
  • 1/4 tsp. salt
  • 15-16 oz. can butter beans, drained
  • 2 c. chicken breast, cooked and chopped

Directions

    Heat oil in 4 quart Dutch oven.

    Over medium heat, cook onions and garlic in oil, stirring occasionally until onions are tender.

    Stir in remaining ingredients except chicken.

    Heat to boiling; reduce heat and simmer uncovered 20 minutes.

    Stir in chicken; simmer until hot. Makes 6 servings.
