White Chocolate Pecan Pie

Ingredients

  • 1 9 inch crust-refrigerated
  • 1 egg
  • 1/3 c light brown sugar
  • 1/4 c dark corn syrup
  • 1/4 c dark corn syrup
  • 2 Tbsp butter
  • 1 tsp vanilla
  • pinch salt
  • 2 c chopped pecans
  • 3/4 c chopped white chocolate
  • 1 egg yolk
  • 1/4 c chopped white chocolate

Directions

    With electric mixer, beat together egg, egg yolk, and 1/3 c light brown sugar for 5 minutes.

    Mix in 1/4 c each of light and dark corn syrup, 2 Tbsp butter, 1 tsp vanilla and pinch of salt. Stir in 2 cups pecans and 3/4 c chopped white chocolate.

    Pour into refrigerated pie crust and bake in 350 degree oven for 40 minutes.

    Drizzle with melted white chocolate.
