- 4 medium white potatoes (baking type best)
- 4 eggs
- 3/4 c. evaporated milk
- 1/4 tsp. baking powder
- 1 stick butter
- 1/4 tsp. lemon flavoring
- 1 Tbsp. plus 1 tsp. vanilla flavoring or to taste
- sugar to taste
- pinch of salt
- 2 unbaked (9-inch) pie shells
- grated coconut
Directions

1Peel and quarter the white potatoes; boil them until tender. Put cooked potatoes in a large bowl.

2Mash potatoes until smooth, then mix them with butter, sugar, salt, lemon and vanilla.

3Add eggs, milk and baking powder; beat until smooth.

4Add more sugar, if desired.

5Pour mixture into pie crust shells and sprinkle lightly with grated coconut.

6Bake in a preheated 350° oven until done.
