- 4 medium white squash
- 1 cup flour
- 1 large egg
- 1 cup sugar
- 1 teaspoon vanilla
- oil (for frying)
Directions

1Peel squash and cut into small cubes.

2Boil in water until very very tender, drain well.

3Mash squash with a fork or large spoon, add beaten egg, sugar, flour and vanilla.

4Make into patties about the size of your palm and fry in 1/2 inch of oil until light brown.

5Serve hot.
