- vegetable oil
- 2 c. flour
- 1 Tbsp. baking powder
- 2 1/3 Tbsp. sugar
- 1 tsp. salt
- 1 egg
- 1/2 c. milk
- 1/3 to 1/2 c. fruit
- powdered sugar
Directions

1Pour oil into skillet or pan to depth of 1 1/2-inches.

2Heat over medium heat to 350°.

3Blend dry ingredients.

4Stir in egg, milk and fruit. Beat until batter is smooth and thick. Drop by spoonfuls into oil. Fry until evenly brown, about 3 to 5 minutes. Remove with slotted spoon to drain on paper towel. Dust lightly with powdered sugar.

5Serve immediately.

6Makes 16 to 18 fritters.
