Whole Stuffed Cabbage

  • 1 large cabbage head
  • 3 c. cooked brown rice
  • 1 c. diced onion
  • 1 medium, diced carrots
  • 1/2 c. minced parsley
  • 2 Tbsp. lemon juice
  • 1/4 c. raisins
  • 1/2 c. Feta cheese
  • 1/4 c. chopped walnuts
  • 1 1/2 Tbsp. cinnamon
  • 1 c. tomatoes, diced
  • 2 eggs, beaten
  • spaghetti sauce

Directions

    Cook cabbage head 10 minutes or until tender.

    Drain and cool. Mix together other ingredients.

    Peel back all leaves until the center of cabbage is exposed (about the size of a grapefruit). Cut this portion away.

    Use half of filling to stuff center.

    Roll enough leaves up to cover.

    Use other half of filling and roll remaining leaves up.

    Put the cabbage head and remaining leaves that have been rolled up into a baking pan.

    Cover with spaghetti sauce.

    Add 1/2 cup of water around cabbage head.

    Cover and cook in the oven at 350° for 45 minutes to 1 hour.
