- 5 c. warm water
- 1/2 c. honey OR *1 c. sugar
- 1/2 c. oil
- 3 Tbsp. liquid lecithin
- 2 Tbsp. salt
- 5+ c. wheat flour
- 1/2 c. gluten flour
- 1 Tbsp. Fernipan yeast OR 2 Tbsp. regular yeast
- *If you're using sugar, add 1/2 c. tepid water
Directions

1In large mixing bowl, combine all ingredients at low speed. Increase speed to medium when all combined, then increase the speed by half and beat 5 minutes, adding flour as/if necessary to achieve the consistency you want.

2Cover the bowl with plastic and a towel and let rest for 20-30 minutes.

3Punch down the dough. Form into 4 loaves.
