Wild Chicken Salad

Ingredients

  • 2 (6 oz.) pkg. long grain wild rice
  • 1 c. celery
  • 3/4 c. cooked cubed chicken
  • 1/2 c. chopped pecans
  • 1 (4 1/2 oz.) can chopped ripe olives, drained
  • 1/2 c. chopped green onions, tops and all
  • 1 1/2 c. mayonnaise
  • salt and pepper to taste

Directions

    Cook rice per package directions.

    Combine chicken, olives, onions, pecans, celery and mayo.

    Add mixture to rice.

    Mix well. Season with salt and pepper.

    Refrigerate overnight.

    Take out 30 minutes before serving.

    Stir and serve.
