- 3 wild ducks
- celery
- bell pepper
- onion
- salt and red pepper
- 1/4 c. cooking oil
- 1 c. water
- 1 c. sherry
- flour to thicken gravy
Directions

1Clean and wash ducks inside and out; dry.

2Season well inside and out with salt and red pepper.

3Stuff with a piece of celery, onion and bell pepper.

4Brown the ducks in an open roasting pan in cooking oil.

5Add water and sherry.

6Cover and cook over medium-low heat for 3 hours or until tender.

7This depends on the size of the duck.

8Thicken gravy with flour that has been mixed with water. Serve hot.
