- 2/3 c. wild rice
- 1/2 green pepper, coarsely chopped
- 1/2 red pepper, coarsely chopped
- 2 carrots, coarsely chopped
- 2 stalks celery, coarsely chopped
- 2 2/3 c. chicken stock
- salt and pepper to taste
Directions

1Combine the wild rice, vegetables and chicken stock in a 3-quart casserole.

2Cook on high for 10 minutes.

3Continue cooking on low for 40 minutes.

4Let rice rest in the oven for 10 to 15 minutes.

5Add salt and pepper to taste.
