Wild Rice Casserole

  • 2 c. wild rice
  • 1 c. chopped onion
  • 2 chicken bouillon cubes
  • 1 1/2 c. chopped celery
  • 3 (4 oz.) cans mushrooms
  • 3 Tbsp. margarine
  • 1/2 tsp. salt
  • 2 to 3 cans beef or chicken broth

    Place wild rice in strainer.

    Pour 3 quarts boiling water over rice 4 times, letting rice set in strainer each time, while water returns to boiling.

    Brown onion and celery in margarine.

    Combine all ingredients in 2-quart casserole.

    Bake at 325° for about 1 1/4 hour.

    Add broth if mixture becomes dry.
