- 3/4 c. wild rice
- 3 c. chicken broth
- 1 c. white wine
- 1/2 c. butter (1 stick)
- 1 c. chopped pecans
- 1/2 c. chopped ham
- 2 Granny Smith apples, pared
- 1/4 tsp. cinnamon
- 2 Tbsp. orange liqueur
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3/4 c. Pecan Rice
Directions

1Combine wild rice, chicken broth, white wine and 2 tablespoons butter.

2Cook, covered, over low heat for 45 minutes.

3In large skillet, melt 6 tablespoons butter and add pecans.

4Saute until brown (3 to 4 minutes).

5Add ham, apples and cinnamon.

6Continue to saute until apples are almost cooked (about 5 minutes).

7Add liqueur, salt and pepper and cook 3 more minutes.

8Set aside.

9Add pecan rice to wild rice mixture and cook 20 minutes more.

10Add ham, pecan, apple mixture to rice and blend.
