Ingredients

  • 1/2 c. wild rice, cooked in chicken broth until tender
  • 1/2 c. white rice, cooked in chicken broth
  • 1 c. pecan pieces
  • 1 c. currants
  • rind of 1 orange, grated
  • 1 (10 oz.) pkg. frozen green peas, thawed
  • 1/4 c. vegetable oil
  • 1/3 c. fresh orange juice
  • 1 tsp. salt
  • freshly ground pepper to taste

Directions

    Combine all ingredients and mix well.

    Let stand at least 2 hours (overnight is better).
