- 1 c. uncooked wild rice
- seasoned salt (optional)
- 2 c. diced cooked chicken
- 1 1/2 c. halved green grapes
- 1 c. water chestnuts or celery
- 3/4 c. light mayonnaise
- 1 c. cashews (optional)
- lettuce
Directions

1Cook rice according to package directions, omitting any salt if desired.

2Drain well.

3Cool to room temperature.

4Put in large bowl.

5Add chicken, grapes, chestnuts or celery and mayonnaise. Toss gently.

6Cover and chill.

7Just before serving, add nuts and serve on lettuce.
