Wild Rice Salad

  • 1 (6 oz.) box long grain and wild rice
  • 1 medium red onion
  • 1 c. sliced mushrooms (fresh or canned)
  • 1 clove minced garlic
  • salt and pepper to taste
  • 1 jar marinated artichoke hearts

Directions

    Cook rice according to directions.

    Slice onion and artichoke hearts.

    After rice is cooked, while still warm, add artichoke hearts, mushrooms, onion and garlic.

    Mix well.

    Add marinade from artichokes.

    Mix well.

    Salt and pepper to taste.

    Refrigerate.
