- 1 (6 oz.) box long grain and wild rice
- 1 medium red onion
- 1 c. sliced mushrooms (fresh or canned)
- 1 clove minced garlic
- salt and pepper to taste
- 1 jar marinated artichoke hearts
Directions

1Cook rice according to directions.

2Slice onion and artichoke hearts.

3After rice is cooked, while still warm, add artichoke hearts, mushrooms, onion and garlic.

4Mix well.

5Add marinade from artichokes.

6Mix well.

7Salt and pepper to taste.

8Refrigerate.
