Wild Rice Salad Supreme

Ingredients

  • 4 cups - cooked wild rice
  • 1 Tbsp - olive oil
  • 1/2 tsp - pepper
  • 1/2 cup - bean sprouts, slightly chopped
  • 1/2 cup - alfalfa sprouts, slightly chopped
  • 1/2 - medium green pepper, sliced thin
  • 4 - celery stalks, sliced thin
  • 4 - green onions sliced thin
  • 1/2 cup - fresh mushrooms, sliced thin
  • 1 - 4oz pkg slivered almonds
  • oil and vinegar dressing

Directions

    Toss cooked wild rice with olive oil and chill thoroughly.

    Combine sprouts, parsley, green pepper, onions, celery and mushrooms and chill.

    At serving time combine rice, chopped and sliced ingredients, almonds, salt and pepper and dressing.

    Toss.

    Garnish with any of the following: chopped, hard-cooked egg, capers, diced tomatoes or crumbled bacon.
