  • 1 Tbsp. oil (for sauteing)
  • 1/2 to 1 lb. chicken breast (boneless and skinless), cut into cubes
  • 1 c. chopped onion
  • 1 (4.8 or 6.25 oz.) pkg. long grain and wild rice mix
  • 1 medium carrot, shredded
  • 2 c. milk
  • 1 (10 3/4 oz.) can condensed cream of chicken soup
  • 1 (17 oz.) can whole kernel corn, undrained
  • 1/4 tsp. pepper
  • 1/4 tsp. thyme
  • 1 c. fat-free sour cream

    In a large skillet, saute chicken and onion until chicken is no longer pink and onion is tender.
