Wild Rice Soup

  • 1/2 c. wild rice
  • 2 c. water
  • 2 Tbsp. butter
  • 1 medium onion, minced
  • 1 qt. milk
  • 2 cans cream of potato soup
  • 1 lb. Velveeta cheese
  • 10 strips bacon, fried crisp and crumbled

Directions

    Cook wild rice in separate saucepan until done.

    Saute onion in butter.

    Add water, milk and canned soup.

    Heat to medium; add cheese in chunks.

    When creamy and well mixed, add wild rice. Garnish with crumbled bacon.
