Wild Rice Stuffing

  • 1/2 c. uncooked wild rice
  • 1 c. hot water
  • 1/4 c. melted margarine
  • 3/4 c. chicken broth
  • 1 tsp. salt
  • 3 green onions
  • 1/2 c. chopped celery
  • 2 1/2 oz. can sliced mushrooms, drained
  • 1/2 tsp. marjoram
  • dash of ground nutmeg
  • dash of garlic powder

Directions

    Soak wild rice in hot water for 1 hour and drain.

    Saute rice in margarine until golden brown.

    Add chicken broth and salt. Cover and simmer about 25 minutes or until tender.

    Add green onions, celery, mushrooms, marjoram and nutmeg.

    Toss lightly to mix.

    Yields about 1 1/4 cups.

    Also can use rice boiled in a bag.
