Wilted Lettuce

Ingredients

  • 1 head lettuce
  • 1 Tbsp. diced onion or more
  • 1/2 tsp. salt
  • 1/3 c. sugar
  • 2 eggs, beaten
  • 5 strips bacon
  • 4 or 5 Tbsp. vinegar

Directions

    Combine cut-up lettuce, onion and salt in a bowl.

    Cut bacon into small pieces, fry until crisp; do not drain.

    Remove from heat and add vinegar, then sugar and mix well.

    Return to heat and slowly add beaten eggs, stirring constantly.

    Stir on heat until mixture thickens.

    Pour over lettuce while warm.

    Mix and serve while still warm.

    Serves 6 to 8.
