  • 1 tsp. salad oil
  • 1 tbsp. finely grated onion
  • 1 tbsp. finely grated peeled gingerroot
  • 2 package pureed winter squash
  • 1 can chicken broth
  • 1 can pear or peach nectar
  • 1/4 tsp. salt
  • Chopped parsley for garnish

Directions

    In 3-quart saucepan over medium heat, in hot salad oil, cook onion and ginger 1 minute.

    Stir in frozen pureed winter squash, chicken broth, pear nectar, and salt.

    Over medium-high heat, heat to boiling, stirring frequently.

    Reduce heat to low; cover and simmer 10 minutes.

    Garnish with chopped parsley.
