- Makes 12 biscuits.
- 2 cups (480 mL) all-purpose flour
- 1 tbsp (15 mL) baking powder
- 1 tsp (5 mL) granulated sugar
- 1/2 tsp (2 mL) baking soda
- 1/2 tsp (2 mL) salt
- 3/4 cup (180 mL)cold unsalted butter, cubed (I use margarine)
- 1 cup (240 mL) yams, roasted and mashed
- 1/2 cup (120 mL) pecans, finely chopped
- 1/3 cup (80 mL) whipping cream
- 1 tbsp (15 mL) milk

1Preheat oven to 400 F (200 C). Lightly oil a baking sheet. In a large mixing bowl, combine dry ingredients and stir to blend. Add butter and work into flour until mixture resembles crumbs. Stir in mashed yams and pecans. Add cream and work in until soft dough is formed. Do not overmix. Turn dough out onto a lightly floured surface. Divide in half and gently pat dough into 2 rounds about 3/4 inch (2 cm) high by 7 inches (18 cm) wide. Cut each round into 6 wedges. Place wedges about 1/2 inch (1/25 cm) apart on prepared baking sheet. Brush with milk. Bake in the centre oven for 12 to 15 minutes, or until biscuits are golden brown.
