Yankee Bean Chowder

Ingredients
- 2 c. dried pea beans (or yellow eyes)
- 2 medium onions, finely chopped
- 2 c. diced carrots
- 2 green peppers, diced
- 3 c. canned tomatoes
- 1 tsp. salt
- 1/2 tsp. black pepper, freshly ground
- 2 c. diced potatoes (unpeeled if they are clean)
- 1 qt. milk
Directions

1Soak the beans until they swell (couple of hours).

2Drain and put in kettle with 3 quarts of fresh water.

3Add the onion and bring to a boil.

4Adjust the heat and simmer until beans are just tender (1/2 to 3/4 hour).

5Add other vegetables and seasoning and cook until vegetables are tender (about 25 minutes).

6Add milk last.

7Serve as soon as it is hot.

8Makes 12 to 15 servings. (Half it for family of six.)
