- 1 package active dry yeast
- 1/4 cup water
- 1 3/4 cups lukewarm milk (scalded and then cooled)
- 2 tablespoons sugar
- 2 teaspoons salt
- 3 eggs
- 1/4 cup butter, softened
- 2 cups all-purpose flour
Directions

1In a large mixer bowl, dissolve yeast in warm water.

2Add remaining ingredients; beat until smooth.

3Cover; let rise in warm place 1 1/2 hours.

4Stir down batter.

5Cover again; refrigerate 8- 12 hours.

6Stir down batter.

7Pour from cup or pitcher onto center of hot waffle iron.

8Do not overfill iron.

9Bake about 5 minutes or until steam stops.

10Variation: Pecan Waffles.

11For each waffle, sprinkle 1/4 cup chopped pecans on heated waffle grids.

12Close iron; heat about 3 minutes or until nuts are golden brown.

13Pour batter over nuts and bake as directed above.
