- 1 c. potatoes, cooked and mashed
- 1 1/2 c. potato water
- 2/3 c. sugar
- 2/3 c. shortening
- 2 eggs, beaten
- 2 pkg. yeast
- 7 1/2 c. plain flour
- 2 tsp. salt
Directions

1Dissolve yeast in lukewarm potato water.

2Mix sugar and shortening together; add eggs, yeast, potatoes and flour.

3Mix well; cover and let rise in refrigerator overnight.

4Take out what you need and make out into rolls and let rise, about 2 hours. Bake at 400° until brown.
