  • 1 1/2 c. cooked squash
  • 1 1/4 c. sugar
  • 4 eggs, separated
  • 1/2 stick butter, melted
  • 1 c. canned evaporated milk
  • 1 tsp. lemon extract
  • nutmeg (optional)

Directions

    Cook squash in salted water until tender; drain.

    Mix squash and sugar.

    Add well beaten egg yolks, buttermilk and lemon extract; beat well.

    Beat egg whites until stiff.

    Fold into squash mixture.

    Pour into pie shells.

    Sprinkle top with nutmeg. Bake for about 40 minutes at 350°, or until tests done.
