- 1 1/2 c. cooked squash
- 1 1/4 c. sugar
- 4 eggs, separated
- 1/2 stick butter, melted
- 1 c. canned evaporated milk
- 1 tsp. lemon extract
- nutmeg (optional)
Directions

1Cook squash in salted water until tender; drain.

2Mix squash and sugar.

3Add well beaten egg yolks, buttermilk and lemon extract; beat well.

4Beat egg whites until stiff.

5Fold into squash mixture.

6Pour into pie shells.

7Sprinkle top with nutmeg. Bake for about 40 minutes at 350°, or until tests done.
