  • 1 quart plain low-fat yogurt
  • 1 garlic clove, finely minced
  • 2 tablespoons minced parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried tarragon
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • crackers or vegetables

    Rinse a one foot length of cheesecloth in cold water and wring out.

    Place yogurt in center, wrap cloth around it and set in strainer or colander in a bowl.

    Refrigerate until thick, 8-14 hours.

    Discard drained liquid and unwrap.

    Mix yogurt and remaining ingredients; refrigerate several hours for flavors to blend.
