Ingredients

  • 1 c. milk, at room temperature
  • 2 eggs, at room temperature
  • 1 Tbsp. oil
  • 1/4 tsp. salt
  • 1 packet Sweet 'N Low or heaping tsp. sugar
  • 1 c. all-purpose flour

Directions

    Preheat oven to 450°.

    Put oven rack on bottom shelf.

    Mix the first 5 ingredients.

    Add flour.

    Mix until only pea size lumps remain (like pancake batter).

    Pour into Teflon muffin tins or spray regular tins with cooking spray.

    Fill 2/3 full.

    Bake 15 minutes.

    Reduce heat to 350° and bake an additional 20 minutes. Do not peek.

    Remove from oven and cool in tin for a few minutes before serving.
