  • 1 lb. eggplant, cut into 1/2 x 3/4 x 2-inch slices
  • 1 1/2 Tbsp. chopped scallions
  • 1 1/2 Tbsp. chopped garlic
  • 1 1/2 Tbsp. chopped ginger
  • 1/2 Tbsp. hot bean paste
  • 3/4 to 1 1/2 lb. lean pork
  • 1 tsp. salt
  • 1 tsp. sugar
  • pinch of ground white pepper
  • 1 1/2 Tbsp. rice wine vinegar
  • 1 Tbsp. soy sauce
  • 1/2 c. broth
  • 1 1/2 Tbsp. cornstarch
  • 1 1/2 Tbsp. water

    Steam eggplant slices until tender (50 minutes in a steamer or 8 minutes in microwave). Chop and measure other ingredients and set aside.
