- 3 tsp. fresh orange juice
- 3 tsp. unsweet pineapple juice
- 2 tsp. lime juice
- 2 tsp. oregano
- 1 tsp. olive oil
- 1 tsp. cumin
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1 clove chopped garlic
- 4 to 6 dashes tabasco sauce
- 2-1/2 lb. chicken pieces
- 1 cup rice
- 1-1/4 cup water
- 1 cup coconut milk
Directions

1Combine first 10 ingredients in a blender and puree until smooth.

2Saute chicken pieces in olive oil until light brown.

3Then place in baking dish skin side up and brush with blender mixture.

4Brush occasionally while baking.

5Bake at 350F for 45-60 minutes.

6While chicken is cooking prepare coconut rice.

7Bring all to boil and turn down to simmer until all liquid is absorbed, about 25 minutes.
