Yummy Beets

  • 1 bunch beets with greens attached
  • 1 strip thick-sliced bacon, diced
  • 2 Tbs. sugar
  • 2 Tbs. apple cider vinegar

    Bring 2 quarts of water to boil in 3 qt sauce pan. Add whole beets with 1 inch of stem still attached. Cook at a simmer for approx. 20 minutes for small, 'egg-size' beets, longer for larger sized beets, until fork pierces to center of beet easily. Drain from water. Let cool, then peel, and dice into 1/2 inch cubes.

    In a large skillet, cook stems, chopped into 1-inch pieces, for 3 minutes. Add beet greens, well washed and chopped coarsely. Cover pan and let steam 3 to 4 more minutes until greens are wilted. Remove stems and greens from pan and set aside.

    Fry diced bacon until crisp. Remove bacon from pan and add to greens. Pour off all but 1 Tbs of bacon fat. Add sugar and vinegar and heat to a boil. Return stems, greens and diced beets to pan. Stir to mix well and heat through. Cook 1 to 2 minutes more.
