  • 4 potatoes, peeled and chopped fine
  • 1 carrot, peeled and chopped fine
  • 1 large onion, chopped fine
  • 2 c. chicken broth
  • 1/4 c. melted margarine
  • 3 Tbsp. flour
  • 2 c. milk
  • salt and pepper to taste
  • 2 c. grated sharp cheese

Directions

    Combine first 4 ingredients in large saucepan.

    Simmer, loosely covered, for 15 minutes.

    Blend margarine and flour in saucepan. Whisk in milk gradually until smooth.

    Add cheese.

    Cook over low heat until melted, stirring constantly.

    Add salt and pepper.
