Yummy Grits

Ingredients

  • 1 qt. milk
  • 1 stick oleo
  • 1 c. grits
  • 1 c. diced Swiss cheese
  • 1 tsp. salt
  • 1/3 c. oleo
  • 1/2 c. Parmesan cheese

Directions

    Heat 1 quart milk until steaming.

    Add 1 stick oleo.

    Heat to boiling point, then gradually add 1 cup grits, stirring all the while.

    Cook milk, oleo and grits until thick, like mush.

    Keep stirring.

    Remove from heat.

    Add diced Swiss cheese (I usually grate) and 1 teaspoon salt.

    Beat with electric mixer for 5 minutes.

    Pour into 9 x 13-inch casserole.

    Pour melted oleo over (1/3 cup).

    Sprinkle with Parmesan cheese.

    Bake at 350° for 35 minutes until golden brown, uncovered.
